SIGNOR LIEVITO is a small sourdough bakery in Milan, opened in April 2022.

In just 60 square metres, it embodies the essence of craftsmanship and community. When we began, our baking space measured only ten square metres and housed just three Rofco ovens , a humble start that shaped who we are today.

Founder Natalia Nikitina, is originally from Latvia and has called Milan home for over 15 years. She began baking bread at home for her children and family. Soon, she was delivering her loaves by bicycle to neighbours and friends across the city. In those early months, she mixed, baked, and pedalled every day, until she realised this was more than a hobby; it was her calling.

From that discovery, the idea of opening a small bakery was born a place to share her sourdough and her passion with the Milan community.

Today, Signor Lievito is known for its slow fermentation and Nordic-inspired bakes, such as cardamom, poppy seed buns and cinnamon buns , along with our signature laminated pastries. Natalia’s recipes are shaped by her travels and the places she has called home.

Our menu changes with the seasons, featuring fruits and vegetables at their peak and always a selection of traditional rye breads, including our beloved Borodinsky.

In April 2025 Natalia has moved her beloved little lab to new nearby space, where she can expend more and bake more to make people happy!

The bakery’s interior — designed by Hannes Peer — reflects the same values that guide our baking: natural, balanced, and timeless. Terracotta tiles, birch wood, and soft light create a calm, welcoming space where the counter, café, and open laboratory exist in harmony.

Each morning our team welcomes early risers and regulars who gather for good bread, good coffee, and the simple pleasure of something made with care.

Signor Lievito is more than just a bakery.
